Winter salad

This is the second recipe that I created with the AirFryer xxl from Philips®. Freekeh is a hard wheat harvested green and then roasted. Compared to common wheat, this green wheat contains more protein and nutrient fibers, as well as various vitamins and minerals including calcium, potassium, iron and zinc. This recipe is super fast and healthy and the taste and look, fits perfectly with this winter season. You can make it also in the oven, just be aware that the cooking time may be a bit longer.

100g freekeh, ongekookt
300ml groentebouillon
2 aubergines
1 teentje look, geplet
2 el citroensap
4 el tahini
1/2 tl gerookt paprikapoeder
wortelgroenten: wortels, bietjes, rapen
extra vergine olijfolie
1 granaatappel
Kook de freekeh in de groentebouillon gaar (± 20 minuten).  Maak ondertussen de baba ganoush. Prik de aubergines rondom in het vel met een vork. Gaar deze 15 minuten in de AirFryer op 175ºC. Laat afkoelen, schep het vruchtvlees erin en breng over in een hoge maatbeker. Voeg de look, citroensap, tahini en paprikapoeder toe en mix tot een smeuïge massa. Wrijf de wortelgroentjes in met wat olijfolie, leg in de AirFryer en airfry 10 minuten op 175º tot de groentjes beetgaar zijn. Snijd de granaatappel doormidden. Haal de pitjes eruit en vang het sap op. Meng 4 eetlepels granaatappelsap en 2 eetlepels olijfolie onder de freekeh. Dresseer op borden met de baba ganoush, geroosterde groenten en granaatappelpitjes.

100g freekeh, uncooked
300ml vegetable stock
2 eggplants
1 clove of garlic, crushed
2 tbsp lemon juice
4 tbsp tahini
1/2 tsp smoked paprika powder
root vegetables: carrots, beetroot, turnip
extra virgin olive oil
1 pomegranate
Cook the freekeh in the vegetable stock until done (± 20 minutes). Meanwhile, make the baba ganoush. Prick the aubergines all around with a fork. Cook for 15 minutes in the AirFryer at 175ºC. Allow to cool, pour in the flesh and transfer to a large measuring cup. Add the garlic, lemon juice, tahini and paprika powder and mix to a smooth mass. Rub the root vegetables with some olive oil, place in the AirFryer and airfry for 10 minutes at 175º until the vegetables are semi cooked. Cut the pomegranate in half. Remove the seeds and collect the juice. Mix 4 tablespoons of pomegranate juice and 2 tablespoons of olive oil under the freekeh. Arrange on plates with the baba ganoush, roasted vegetables and pomegranate seeds.
