Cheesecake bean brownies

I had to make these brownies a few times. In patisserie, measurements are often important, also in this recipe. Certainly because the flour is replaced by beans. Too much cocoa powder gives a bitter taste, too little moisture causes a dry brownie, too little sweetener doesn’t mask the savory taste from the beans. So just follow the guidelines and it will work out well. Make sure you eat it immediately, ‘cause when you keep it in the fridge, the brownie will dry out. The best thing is to take it out of the oven, let it rest for 20 minutes and then eat it, while the inside is still smothered and a bit warm. 


Ingrediënts (for 8 pieces):

Brownie ingrediënts: 160g red kidney beans, rinsed and drained | 2 medium eggs | 1/2 ripe avocado | 1 tbsp melted coconut oil | 1 tbsp (nut)milk | 2 tsp pure vanilla extract | 2 tbsp honey | 40g chocolate chips (60% cocoa) | 35g unsweetened cocoa powder | 1/2 tsp baking powder | 1/4 tsp baking soda | 2 tbsp Tagatesse | 40g walnuts, chopped

Cheesecake ingrediënts: 250g cream cheese, at room temperature ∞ 1 medium egg ∞ 1 tbsp Tagatesse ∞ 1 tsp vanille-extract | 20g chocolate chips (60% cocoa)

→ Preheat the oven to 180°C. In a foodprocessor, process the kidney beens, eggs, avocado, coconut oil, milk, vanilla extract, honey and 30g of the chocolate chips until you have a smooth mass. In a large mixing bowl, mix the cocoa powder, baking powder, baking soda and sweetener. Add the been-mass to the cocoa powder and mix well. Add the other 10g of chocolate chips and chopped walnuts and mix again with a spoon. For the cheesecake, just mix with a handmixer all the ingredients, except the chocolate chips. Take a baking pan and cover the base and sides with aluminium foil. Pour browniebatter into prepared pan, and cover with the cheesecake-batter. Sprinkle the remaining chocolate chips on top. Bake for circa 30 minutes or until knife inserted in center comes out somewhat clean and top of the cheesecake begin to crack. Leave the brownie in the switched off oven with the door slightly open for a further 15 minutes. Cool on a wire rack, then lift the brownie out of the tin and peel away the foil. Cut the brownies into squares.
