Raspberry jam


For 250 gram:

250g raspberries | 1 tbsp lemon juice | 2 tbsp honey | 1 tbsp warm water | 1 tsp vanilla-extract | 1 tsp ground cardamom | 1.5 tbsp chia seeds

→ Put all the ingredients, except the chia seeds, in a small saucepan and heat slowly until it boils. Smash the raspberries with the back of a wooden spoon. When it boils, lower the heat and let simmer for 15 minutes. Remove from heat, let cool down a bit and then add the chia seeds. Poor into sterilized jars and allow it to set at room temperature. Refrigerate (for two weeks).
