Green tofu mousse

Makes two cups:

1 avocado | juice of 1/4 lemon | 1 pear* | 100g soft organic tofu | 1.5 tbsp honey or agave syrup | toppings: chopped nuts, fresh mint, cocoa nibs

→ Scoop the flesh out of the avocado. Press the juice from the lemon. Put them in a blender along with the pear, tofu and honey. Mix until there is a smooth mousse formed. Divide in glasses and top with whatever you want. Serve immediately or restore max. 1 day.

*You can actually put every fruit you want in it, just keep the avocado.
