Ingredients for 1 person:

For the base: 20g walnuts ∞ 1 tbsp coconut flakes ∞ 3 seedless dates, chopped ∞ 1 tbsp unsweetened cocoa powder ∞ 1 tbsp coconut oil ∞ pinch of salt

For the chocolate mousse: 200g silken tofu ∞ 100g dark chocolate (>70% cacao) ∞ 1/2 tsp maple syrup ∞ 1/2 tsp vanilla essence ∞ 1 tbsp rum ∞ 2 tbsp water

→ Mix for the base all the ingredients in a foodprocessor for 3 minutes. Put in a jar and set away in the fridge. Melt the chocolate at low temperature. Put all the other ingredients in a froodprocessor and mix to a soft mush. Spatula the chocolate sauce underneath. Top with anything you like: fruits, nuts, bee pollen, etc.
