I already saw a lot of chocolate cake recipes with beetroot in it but never tried it. It’s not that I don’t like beetroot, it’s just sounds a bit weird. Although, I like carrotcake a lot and just like carrots, beetroots are vegetables so why not? I used the recipe from greenkitchenstories and David was so right about the beetroots. They don’t taste earthy or strange at all, they actually make the chocolate more intense. Besides, there are vegetables in this chocolate cake, so it’s a bit healthy, right?
Ingrediënts for 6 persons (45 minuten):
120ml e.v. olive oil ∞ 80ml maple syrup or honey ∞ 60g dark chocolate (>75% cocoa) ∞ 3 beetroots (250g), grated ∞ 3 eggs ∞ 180g flour ∞ 2 tsp bakingpowder ∞ 5 tblsp cocoa powder ∞ pinch of salt
Preheat the oven at 180°C. Heat the oil in a big saucepan on low heat. Add the maple syrup or honey and 40g of the chocolate and stir until the chocolate has melted. Take of the fire and add the grated beetroots. Mix the eggs under it. Sieve the flour, bakingpowder, cocoa powder and salt above it and mix until smooth. Take the remainer chocolate, cut this into small pieces and stir among the mix. Fat in baking tins with oil and sprinkle lightly with flour. Pour the batter into it an bake for 25 minutes. The batter should still be slightly sticky. Take out the oven and let cool for 15 minutes. Finish with some hot chocolate sauce on top of the cake.
