Ceci n’est pas une soupe: tomatogazpacho with cherries and basil

This is really the most delicious gazpacho you will ever “eat”. And it’s super easy. Did you know that gazpacho isn’t actually a soup. It is a salad crudités liquid integrating its own seasoning based on oil and vinegar. And the ultime secret to get the most tasteful gazpacho is to make sure that the individual tastes can full release. That means that before mixing it, you should put all the ingredients together and let it rest overnight to mix their flavor.


Makes 3 x 150ml


→ mix 500g chopped tomatoes, 200g pitted cherries with 40ml extra vergine olive oil, 2 tablespoons balsamic vinegar, peper and salt in a blender. Then you sieve the mixture and finish with basillicum. Serve cold.
