Granola breakfast with cashewcream

Serves 2:
1 red apple | 1 plum | 10 big blackberries | 1 tablespoon honey | a pinch of cinnamon
1 tablespoon lemon juice | granola | 500g low fat yogurt
200g cashews, soaked overnight | 2 medjool dates, pitted and soaked in hot water for 15 minutes | 1 teaspoon vanille-extract

Cut the apple and plum in pieces. Put this in a saucepan with 6 blackberries, the honey and cinnamon and simmer for 10 minutes until the fruit has softened. Meanwhile, make the cashewcream. Put the soaked cashews, the medjool dates and vanille-extract with 100 ml water in a blender and blend until smooth. Put the yogurt on a plate, cover with the cooked fruit, top with granola, cashewcream and the remaining fresh blackberries.
