Granola breakfast with cashewcream

 Rule number one of a healthy lifestyle: have a healthy breakfast!



Serves 2:

1 red apple ∞ 1 plum ∞ 10 big blackberries ∞ 1 tablespoon honey ∞ a pinch of cinnamon ∞ 1 tablespoon lemon juice ∞ granola ∞ 500g low fat yogurt ∞ 200g cashews, soaked overnight ∞ 2 medjool dates, pitted and soaked in hot water for 15 minutes ∞ 1 teaspoon vanille-extract

→ Cut the apple and plum in pieces. Put this in a saucepan with 6 blackberries, the honey and cinnamon and simmer for 10 minutes until the fruit has softened. Meanwhile, make the cashewcream. Put the soaked cashews, the medjool dates and vanille-extract with 100 ml water in a blender and blend until smooth. Put the yogurt on a plate, cover with the cooked fruit, top with granola, cashewcream and the remaining fresh blackberries.
